Strong Drinks to Order at a Bar for Spirit-Forward Cocktails

Two beautifully crafted drinks in short glass tumblers, one amber with a dehydrated citrus wheel and one clear with an orange peel twist, sitting on a dark wooden table at a Cocktail bar ubud.

The strong drinks to order at a bar are rarely the ones with the highest alcohol content, and at a cocktail bar in Ubud, the distinction matters more than it sounds. Strength in a cocktail can mean alcohol, flavour or both, and the drinks that taste most spirit-forward are often built to be sipped slowly.

What Makes a Drink Strong

Two things get called strong, and they are not the same. Alcohol strength is a question of ABV, while spirit-forward describes how prominently the base spirit comes through in the glass.

A stirred drink of gin, vermouth and bitters can have a similar alcohol content to a shaken sour, yet taste considerably more spirit-forward. There is less acidity, sweetness and dilution to soften the base, so the character of the spirit stays in focus.

Dilution is the part many drinkers underestimate. Shaking a cocktail with ice generally chills it quickly and introduces more dilution than stirring. Stirring chills and dilutes more gently, which is one reason spirit-forward cocktails are so often stirred and served in smaller quantities.

Temperature matters too. A very cold cocktail can make alcohol feel less prominent at first, while a drink that warms slightly in the glass can reveal more aroma and spirit character. A well-made spirit-forward cocktail is therefore designed to change as you drink it, rather than hit at full intensity from the first sip.

The Classic Strong Templates

A bartender wearing a pinstripe vest sliding a classic amber cocktail over a large ice cube, garnished with an orange peel, across a red textured counter at a Cocktail bar ubud.

Once you understand that strength is a matter of construction as much as alcohol, the classic spirit-forward family narrows to a handful of familiar templates.

The Negroni is the bitter one. Gin, sweet vermouth and a bitter aperitivo, traditionally in equal proportions, stirred and served over ice with orange. It has enough bitterness and sweetness to create balance while keeping the gin present.

The Old Fashioned is the most direct. Whisky, sugar, bitters and a twist, with the spirit almost entirely exposed. Order it when you want to taste what the bar is pouring rather than what the bar can build around it.

The Martini is the driest and most exacting. Gin or vodka with dry vermouth, stirred cold and traditionally served without ice. Small, cold and dependent on the quality of its ingredients, it leaves very little room for error.

The Boulevardier is the Negroni’s whisky cousin, replacing gin with bourbon or rye and giving the drink a richer, warmer character. The Manhattan belongs to the same broad family of stirred, spirit-led cocktails, built around whisky, sweet vermouth and bitters.

How to Order and Pace a Strong Drink

Knowing the templates is only half of it. Drinking them well is the other half, particularly with spirit-forward cocktails.

If the drink is served over ice, one large cube can be useful because it melts more slowly than several smaller pieces, allowing the cocktail to chill and dilute gradually. Many bars already build spirit-forward drinks this way, but it is a reasonable preference to mention if you have a choice.

Food can also change how a strong drink feels. Salty or rich food can complement bitter and spirit-forward cocktails, while eating before or alongside a drink may also slow the pace at which you consume alcohol. At Pinstripe Bar, the food menu runs from 5 PM to 9 PM, making the early evening a natural time to pair a drink with something to eat.

Then slow down. A spirit-forward cocktail is meant to be sipped, and a little dilution as the ice melts can soften the drink and open up its aromas. Finishing it quickly means you miss part of that progression and makes it harder to judge the balance.

If you are unsure what direction you want, say bitter, rich or dry. Those words give the bar team a useful starting point and can lead towards a Negroni, Boulevardier or Martini-style drink.

Strong Drinks to Order at Pinstripe Bar

At Pinstripe Bar, several drinks show different sides of the spirit-forward style, from barrel-aged bitterness to a dry Martini flight.

The Solera Barrel Negroni is the one to start with if you want to explore ageing. Two years of barrel ageing rounds the bitterness and adds depth, giving the drink a more integrated character while retaining the structure of a Negroni. The Holy Negroni provides a useful comparison, allowing you to taste the difference between the fresh and barrel-aged versions.

The Old Fashioned is built on Bulleit Rye and Bourbon, giving it a spice-led backbone rather than a purely sweet profile. It is a direct way to experience the whisky without a long list of competing ingredients.

Bluvadier takes the Boulevardier template to Johnnie Walker Blue Label, making it a more elaborate interpretation of the classic. The Composer works in a similar direction with Bulleit Bourbon, giving the drink a rounder profile.

For the driest end of the spectrum, the Martini Flight serves three 40 ml pours built around Tanqueray No. TEN with Dolin Dry and Cocchi Americano. Three small serves make it possible to compare the variations side by side and see how the supporting ingredients change the character of the drink.

Reserve Your Table at Pinstripe Bar

A bartender in a pinstripe vest and bowtie carefully using a long bar spoon to prepare a large goblet glass filled with ice and a cucumber garnish at a Cocktail bar ubud.

Spirit-forward cocktails suit a room where you can settle in rather than rush through a drink. Pinstripe Bar sits above the Valley of the Kings and opens daily from 4 PM to 11.30 PM, with live music on Friday and Saturday evenings.

Tell the bar team whether you want something bitter, rich or dry, and they can point you towards a drink that matches the direction you have in mind.

Frequently Asked Questions

What is the strongest cocktail to order?

That depends on what you mean by strong. A neat spirit or a spirit-forward cocktail such as a Martini can taste more intense because there is less sweetness, acidity or dilution competing with the base spirit. Alcohol content, however, depends on the recipe, pour size and dilution.

Is a Negroni or an Old Fashioned stronger?

An Old Fashioned generally contains a higher proportion of base spirit, while a Negroni combines gin with sweet vermouth and a bitter aperitivo. The Negroni can nevertheless taste more intense because of its bitterness, which shows why flavour intensity and alcohol strength are not the same thing.

How do you drink a strong cocktail without rushing?

Sip it slowly and let the drink change as it warms and dilutes. If it is served over ice, a large cube will generally melt more slowly than several smaller pieces. Ordering food alongside it can also help you pace the evening.

Such a great venue hidden right in the rice fields… incredible atmosphere! So stylish and jazzzy! Was admired by the live band - my favorite saxophone and grand piano with beautiful vocal..! Took me to Chicago…

Thanks a lot for your great service and this exclusive vibe that you bring to Ubud!

As a founder of dance show in Bali I enjoyed this cocktail so much 😃🍸💫
We had a wonderful evening in this bar with its unique and charming decor. The staff is attentive and helps make this a party, a little extra for the cocktails vs. the food, which is still very good!

Such a beautiful, quiet hidden gem in Ubud.

I stumbled upon this place when I was searching up places that did live jazz in Bali, and I made a reservation for a Thursday evening as they only do live music on Thursdays and Fridays. This lovely bar is nestled in Viceroy Bali, and it is an absolutely gorgeous property.

On that evening, I was attended to by Chagga and Dewa, who were both incredibly attentive. The staff were all very friendly and it was great making small talk with them. It was lovely meeting them. The service was top-notch, and I was escorted to my seat and then to my car when I was ready to leave.

The food was excellent - very fresh and flavourful. Portions are a little on the smaller side since it comes from their fine dining restaurant, Apéritif, next door. But everything was yummy and served promptly.

The drinks however, were the star of the show. Each cocktail on their menu has a story and is inspired by an influential figure. I enjoyed hearing about how they conjured up each one, and the drinks themselves were excellent.

Live music was on point as well. I wish I could have stayed a bit longer to enjoy but I suppose I’ll just have to come back sometime :) Chagga shared that the live music on Fridays is more akin to proper jazz. To round off the evening, Chagga gave me some free martini shots which were incredibly smooth and strong.

Thank you for the spectacular time - I can’t wait to be back!

Really lovely bar in Bali, highly recommend. We made a reservation for the bar (only) and when we showed up, we were the only guests. But that did not make for an awkward evening! The bartenders were lovely, really knowledgeable and fun and we had a great conversation. Later other guests showed up and the vibe was lovely, relaxed and warm.

The cocktails are also excellent and made with high-quality spirits so that we did not feel it the next day! And the small food items we ordered from the menu - which includes dinner if you are interested - were also very good.

Highly recommend this bar and would be happy to come back!

10/10 atmosphere, 10/10 cocktails.

Super friendly staff helping you with recommendations and suggestions, all while making some absolutely perfect cocktails.

They range cocktails based on strongness, fruitiness, so it’s easy to pick one based on your favourite spirit.

The only caveat here is that although there is a food menu, even the main dishes are “tasting size”, as they are brought from the fine dining restaurant Aperitif. But even so, the venison wellington is out of this world.

A little surprise find when we’re googling live jazz venues, nested in Viceroy hotel. Beautiful Great Gatsby themed bar with 1920s New York vibe, dark interiors and the best service crew.

We’re well looked after by the team, and special thanks to Changga the lead bar tender who made our cocktails - every order was exquisite, with a lot of depth and taste. Easily one of our best finds in Ubud.

Definitely one of the best bars I’ve visited in Bali. We ordered the refreshing The Primitivist, the spicy The Novelist, and the fruity The Dancer. None of them dissappointing, so delicious and unique. The foods are also delicious and light-bites. Highly recommended.

Do yourself a favour and go to Pinstripe Bar when in Ubud!!! We had an exceptional evening … the bar is beautifully setup with its 1930’s vibe (including some props scattered around like the old pistol I had such fun playing with), the cocktails are amazing and full of sensory experiences whether it’s dry ice, smoked wormwood, peacock feathers and much more, food is great coming out of the adjoining restaurant kitchen.

We’re not smokers but we had such fun heading into the cigar room and choosing a cigar and sitting on the balcony puffing on a cigar and drinking a whisky sour.

But the best part of the evening is easily the staff!!! Each of the mixologists were absolutely amazing, not just with drinks, but being so fun, engaging and entertaining in all the ways you want. A massive thank you Changgu, Eric and the team - you made our night special.

Oh and read the menu and learn a bit about 1930’s Ubud. So interesting!!
We were gifted with a beautiful night out and treated to one of Balis finest evenings. Exquisite food, impeccable ambiance and without a doubt in my mind, one of the best cocktail mixologist there is. Words do not do this place justice. Definitely an experience we will never forget. PS The deserts are truly incredible as was the Lobster tortellini.

Some say it’s hard to pin down what takes a cocktail bar from good to great. But I disagree as you only have to step inside Pinstripe Bar to see outstanding in action.

It’s apparent in the warm welcome, the professional and assured service. It is on display in the curated cocktail list which are made with the world’s top spirit brands and each with a story behind them.

Not only that but the sense of place is at Pinstripe Bar is incredible as it seamlessly combines Balinese hospitality together with a 1930’s speakeasy vibe.

All guest need to do is settle in, peruse the menu and let this magical experience begin. Cocktails offer incredible flavour combinations including native Balinese ingredients, they magically transform colour in the glass and appear topped with smoke filled bubbles for impact.

This theatre adds another level to the experience of enjoying creative cocktails with the team at Pinstripe Bar. Combined with stunning architecture, outstanding food and the sheer scale of the venue makes Pinstripe Bar a must-visit on visit to Bali.

I went to Pinstripe while me and some friends had a staycation in Tegalalang for the weekend. After had dinner we decided to go check the bar at Pinstripe to get maybe one or two glass of margarita. Once I saw their cocktails menu, I had difficulties to choose between their well-crafted menu. Then Panji, the head mixologist served us a welcome drinks, I never expect the taste to be sooo delicious. From there I totally forgot the margarita and just let Panji surprise me with the magical taste of the cocktails that are so delicious I cannot stop sipping them. I tried to guess the ingredients Panji use in my cocktails, which of course mostly failed. The cocktails ingredients are source locally which really interesting because many of them usually use as cooking ingredients.
Definitely will come back to try all the menu.

This is one of my favourite cocktail bars in Ubud! Pinstripe is a must visit bar that is great to visit solo or with a group of friends. They have a huge range of premium spirits, if you are into tequila, gin or whiskeys, this place has the biggest range in Ubud.

The cocktails are really inventive and aesthetic. Personally I love the Mezcal one with the peacock feather, it is delicious and the flavours are balanced perfectly.

The atmosphere is cosy yet it’s a large space with an indoor and outside terrace with jungle views. Perfect place to sit of an afternoon with cocktails or wine and then move inside for the lively atmosphere at night time.

This bar is really unique and I recommend to all my friends visiting Bali to make sure they don’t miss out on visiting!

This is simply as good as a bar gets. It is somewhat hidden and more a speak easy than a bar. Staff is impeccably talented. The atmosphere is perfect right down to the smallest detail. I only wish we went here earlier. It may just be the best bar experience in Bali, and that is truly quite that statement.

Exquisite drinks. Didn’t eat this time. Will be back 100%.

Come here if you value:
- exceptionally drinks with presentation
- fluent English speaking, attentive waitstaff
- a low-key vibe, fancy atmosphere, tastefully decorative and clean facilities that sets a 1950s mood

Went here an hour before closing for nightcaps. And no they didn’t kick us out even after it was closed. Managed to have 4 cocktails between two people plus complimentary welcome AND send off drinks. The send off drink is that light purple potion, which I forget the name of, and it’s unforgettably delicious.

Smoking allowed on the deck area. Think cigars are available for purchase.

Look forward to returning for more poisons.
