The Different Types of Mezcal and What They Taste Like

A vast, beautifully illuminated display of premium and diverse liquor bottles resting on the polished wooden counter of a Cocktail Bar Ubud.

Mezcal is one of the most misunderstood spirits at any cocktail bar in Ubud, and the misunderstanding almost always starts with one word: smoky. It is accurate but partial. Mezcal can be bright and herbaceous, softly floral, deeply earthy, or richly savoury, depending on how it is made and which agave it comes from. Understanding the different types of mezcal turns the list from a source of uncertainty into an invitation to explore.

What Is Mezcal

Mezcal is a Mexican spirit distilled from the agave plant. Tequila is itself a type of mezcal, made only from blue agave, but mezcal is far broader, drawing on dozens of agave varieties grown across several Mexican states, with Oaxaca as its heartland. Its smoky character comes from roasting the agave hearts, known as piñas, in underground pits before fermentation and distillation. That roasting gives mezcal its depth, though the intensity varies from one bottle to the next.

The Three Production Categories of Mezcal

A bright pink craft drink in a stemmed glass topped with a theatrical flaming garnish, representing the creative mixology at a premier Cocktail Bar Ubud.

How a mezcal is crafted matters as much as what it is crafted from, and the official classifications reflect that, describing the level of traditional artisanship involved, from modern and efficient through to almost entirely handmade.

Mezcal

The standard category permits some modern equipment alongside traditional steps. The result is typically cleaner and more consistent, with a more restrained smokiness. A considered entry point for those new to the spirit.

Mezcal Artesanal

The artisanal category demands traditional craft: agave pit-roasted underground, often milled by stone wheel, and distilled in clay or copper pot stills heated by direct fire. These mezcals carry more texture, more smoke, and a depth of character that many consider the true expression of the spirit. The vast majority of mezcal available at the finest bars is artesanal.

Mezcal Ancestral

The ancestral category is the most demanding and the rarest, requiring clay-pot distillation and entirely manual production. Labour-intensive and deeply traditional, these mezcals are prized for their directness and their connection to centuries of craft.

Types of Mezcal by Ageing

Mezcal is also classified by how long it rests before bottling. Ageing softens the sharper edges, adds complexity, and draws new flavours from the wood, running from the pure and vibrant to the opulently mellow.

Joven and Blanco

Joven (young) and blanco (white) are unaged expressions bottled soon after distillation, showing the agave and the smoke at their most direct.

Reposado

Reposado, or rested, mezcal spends two months to a year in wood. The barrel rounds the spirit, adding gentle vanilla and warm spice while keeping the agave clearly present.

Añejo

Añejo mezcal rests in a barrel for at least a year, emerging darker and smoother, the smoke folding into deeper notes of oak, dried fruit, and caramel.

Extra Añejo

Aged three years or more, extra añejo is mezcal at its most opulent: rich and mellow, the smoke now a quiet note beneath layers of fruit, spice, and wood.

Madurado en Vidrio

Madurado en vidrio, or matured in glass, is a rarer style rested in glass rather than wood. It softens while keeping the pure character of the agave, with no barrel influence.

Types of Mezcal by Agave Variety

The agave itself is perhaps the greatest influence on flavour, so the variety on the label is a meaningful clue. With over thirty varieties in use, the range of expression is extraordinary. These are the names most worth knowing.

Espadín

Espadín is the quintessential mezcal agave behind most bottles. Quick to mature, it gives a balanced, approachable spirit with clear smoke, gentle sweetness, and notes of citrus and green herbs. The ideal place to begin.

Tobalá

Tobalá is a wild agave that grows slowly in highland forests, small and hard to harvest. It gives a refined, elegant mezcal with floral, fruity, and subtly earthy notes, widely regarded as one of the finest varieties.

Tepeztate

Tepeztate is a wild agave that can take twenty-five years or more to mature, repaying the wait with an intensely herbaceous, peppery spirit full of bright vegetal character.

Ensamble

Ensamble is not a single agave but a blend of two or more varieties distilled together. No two ensembles are quite alike.

How to Drink Mezcal

Tradition holds that mezcal should be sipped slowly, never rushed. Served neat at room temperature in a small clay copita, it is meant to be nosed and tasted in small sips, letting the smoke and agave reveal themselves gradually. A classic accompaniment is a slice of orange and a pinch of sal de gusano, a savoury worm salt that sharpens the fruit and tempers the smoke. Mezcal also brings remarkable depth to cocktails. However you take it, give the spirit the time and attention it has earned.

Exploring Mezcal at Pinstripe Bar in Ubud

A vast, beautifully illuminated display of premium and diverse liquor bottles resting on the polished wooden counter of a Cocktail Bar Ubud.

Reading about mezcal is where understanding begins; tasting across the styles is where it comes alive. Pinstripe Bar is a cocktail bar in Ubud with a curated agave collection, set in a 1930s-inspired speakeasy amid the rice fields, with the bar team on hand to guide you through it.

Espadín Mezcals on the Menu

For a considered introduction, espadín expressions offer a seamless entry point. Montelobos Espadín Artesanal, Creyente Espadín Artesanal, and The Lost Explorer Espadín are all artisanal, with the balanced smoke and gentle sweetness that make espadín such a rewarding start.

Tobalá and Rare Agave Varieties

For those who wish to venture further, the menu reaches into rarer territory. Tobalá expressions such as Montelobos Tobalá Artesanal, Codigo Tobalá Artesanal, and The Lost Explorer Tobalá offer the variety’s floral elegance, while the Se Busca Madrecuishe and the Codigo Papalome Ancestral take the curious drinker into wilder, more ancient styles.

The Clairvoyant Cocktail

To taste mezcal in a cocktail, the Clairvoyant is the definitive choice. Built with Koch Elemental Mezcal, fino sherry, beetroot, paprika, peanut butter, and watermelon, the cocktail is part of The Clairvoyant menu at Pinstripe Bar. Both the cocktail and the menu take their inspiration from Miguel Covarrubias, the artist nicknamed “The Clairvoyant” for his ability to sense cultural change before it arrived.

Reserve Your Table at Pinstripe Bar

The finest way to understand the different types of mezcal is to taste them in sequence, in a setting worthy of the spirit. Begin with an espadín to find your bearings, then move to a tobalá and notice how the agave changes everything. Close the evening with The Clairvoyant cocktail as the light softens over the Valley of the Kings. Pinstripe Bar is the cocktail bar in Ubud where mezcal is given the time, the setting, and the care it deserves.  Reserve your table and let an unhurried evening introduce you to the agave.

Such a great venue hidden right in the rice fields… incredible atmosphere! So stylish and jazzzy! Was admired by the live band - my favorite saxophone and grand piano with beautiful vocal..! Took me to Chicago…

Thanks a lot for your great service and this exclusive vibe that you bring to Ubud!

As a founder of dance show in Bali I enjoyed this cocktail so much 😃🍸💫
We had a wonderful evening in this bar with its unique and charming decor. The staff is attentive and helps make this a party, a little extra for the cocktails vs. the food, which is still very good!

Such a beautiful, quiet hidden gem in Ubud.

I stumbled upon this place when I was searching up places that did live jazz in Bali, and I made a reservation for a Thursday evening as they only do live music on Thursdays and Fridays. This lovely bar is nestled in Viceroy Bali, and it is an absolutely gorgeous property.

On that evening, I was attended to by Chagga and Dewa, who were both incredibly attentive. The staff were all very friendly and it was great making small talk with them. It was lovely meeting them. The service was top-notch, and I was escorted to my seat and then to my car when I was ready to leave.

The food was excellent - very fresh and flavourful. Portions are a little on the smaller side since it comes from their fine dining restaurant, Apéritif, next door. But everything was yummy and served promptly.

The drinks however, were the star of the show. Each cocktail on their menu has a story and is inspired by an influential figure. I enjoyed hearing about how they conjured up each one, and the drinks themselves were excellent.

Live music was on point as well. I wish I could have stayed a bit longer to enjoy but I suppose I’ll just have to come back sometime :) Chagga shared that the live music on Fridays is more akin to proper jazz. To round off the evening, Chagga gave me some free martini shots which were incredibly smooth and strong.

Thank you for the spectacular time - I can’t wait to be back!

Really lovely bar in Bali, highly recommend. We made a reservation for the bar (only) and when we showed up, we were the only guests. But that did not make for an awkward evening! The bartenders were lovely, really knowledgeable and fun and we had a great conversation. Later other guests showed up and the vibe was lovely, relaxed and warm.

The cocktails are also excellent and made with high-quality spirits so that we did not feel it the next day! And the small food items we ordered from the menu - which includes dinner if you are interested - were also very good.

Highly recommend this bar and would be happy to come back!

10/10 atmosphere, 10/10 cocktails.

Super friendly staff helping you with recommendations and suggestions, all while making some absolutely perfect cocktails.

They range cocktails based on strongness, fruitiness, so it’s easy to pick one based on your favourite spirit.

The only caveat here is that although there is a food menu, even the main dishes are “tasting size”, as they are brought from the fine dining restaurant Aperitif. But even so, the venison wellington is out of this world.

A little surprise find when we’re googling live jazz venues, nested in Viceroy hotel. Beautiful Great Gatsby themed bar with 1920s New York vibe, dark interiors and the best service crew.

We’re well looked after by the team, and special thanks to Changga the lead bar tender who made our cocktails - every order was exquisite, with a lot of depth and taste. Easily one of our best finds in Ubud.

Definitely one of the best bars I’ve visited in Bali. We ordered the refreshing The Primitivist, the spicy The Novelist, and the fruity The Dancer. None of them dissappointing, so delicious and unique. The foods are also delicious and light-bites. Highly recommended.

Do yourself a favour and go to Pinstripe Bar when in Ubud!!! We had an exceptional evening … the bar is beautifully setup with its 1930’s vibe (including some props scattered around like the old pistol I had such fun playing with), the cocktails are amazing and full of sensory experiences whether it’s dry ice, smoked wormwood, peacock feathers and much more, food is great coming out of the adjoining restaurant kitchen.

We’re not smokers but we had such fun heading into the cigar room and choosing a cigar and sitting on the balcony puffing on a cigar and drinking a whisky sour.

But the best part of the evening is easily the staff!!! Each of the mixologists were absolutely amazing, not just with drinks, but being so fun, engaging and entertaining in all the ways you want. A massive thank you Changgu, Eric and the team - you made our night special.

Oh and read the menu and learn a bit about 1930’s Ubud. So interesting!!
We were gifted with a beautiful night out and treated to one of Balis finest evenings. Exquisite food, impeccable ambiance and without a doubt in my mind, one of the best cocktail mixologist there is. Words do not do this place justice. Definitely an experience we will never forget. PS The deserts are truly incredible as was the Lobster tortellini.

Some say it’s hard to pin down what takes a cocktail bar from good to great. But I disagree as you only have to step inside Pinstripe Bar to see outstanding in action.

It’s apparent in the warm welcome, the professional and assured service. It is on display in the curated cocktail list which are made with the world’s top spirit brands and each with a story behind them.

Not only that but the sense of place is at Pinstripe Bar is incredible as it seamlessly combines Balinese hospitality together with a 1930’s speakeasy vibe.

All guest need to do is settle in, peruse the menu and let this magical experience begin. Cocktails offer incredible flavour combinations including native Balinese ingredients, they magically transform colour in the glass and appear topped with smoke filled bubbles for impact.

This theatre adds another level to the experience of enjoying creative cocktails with the team at Pinstripe Bar. Combined with stunning architecture, outstanding food and the sheer scale of the venue makes Pinstripe Bar a must-visit on visit to Bali.

I went to Pinstripe while me and some friends had a staycation in Tegalalang for the weekend. After had dinner we decided to go check the bar at Pinstripe to get maybe one or two glass of margarita. Once I saw their cocktails menu, I had difficulties to choose between their well-crafted menu. Then Panji, the head mixologist served us a welcome drinks, I never expect the taste to be sooo delicious. From there I totally forgot the margarita and just let Panji surprise me with the magical taste of the cocktails that are so delicious I cannot stop sipping them. I tried to guess the ingredients Panji use in my cocktails, which of course mostly failed. The cocktails ingredients are source locally which really interesting because many of them usually use as cooking ingredients.
Definitely will come back to try all the menu.

This is one of my favourite cocktail bars in Ubud! Pinstripe is a must visit bar that is great to visit solo or with a group of friends. They have a huge range of premium spirits, if you are into tequila, gin or whiskeys, this place has the biggest range in Ubud.

The cocktails are really inventive and aesthetic. Personally I love the Mezcal one with the peacock feather, it is delicious and the flavours are balanced perfectly.

The atmosphere is cosy yet it’s a large space with an indoor and outside terrace with jungle views. Perfect place to sit of an afternoon with cocktails or wine and then move inside for the lively atmosphere at night time.

This bar is really unique and I recommend to all my friends visiting Bali to make sure they don’t miss out on visiting!

This is simply as good as a bar gets. It is somewhat hidden and more a speak easy than a bar. Staff is impeccably talented. The atmosphere is perfect right down to the smallest detail. I only wish we went here earlier. It may just be the best bar experience in Bali, and that is truly quite that statement.

Exquisite drinks. Didn’t eat this time. Will be back 100%.

Come here if you value:
- exceptionally drinks with presentation
- fluent English speaking, attentive waitstaff
- a low-key vibe, fancy atmosphere, tastefully decorative and clean facilities that sets a 1950s mood

Went here an hour before closing for nightcaps. And no they didn’t kick us out even after it was closed. Managed to have 4 cocktails between two people plus complimentary welcome AND send off drinks. The send off drink is that light purple potion, which I forget the name of, and it’s unforgettably delicious.

Smoking allowed on the deck area. Think cigars are available for purchase.

Look forward to returning for more poisons.
